Peanut Butter Granola

You know it's good when people ask you for the recipe. When they get the recipe from you then cook a batch weekly. When they serve it to their visitors, even when it's not breakfast time. When they pass it on to the rest of your family and then, before long, the whole family is eating the same thing for breakfast despite being hundreds of kilometres apart. I guess it in that way, it's the granola that brings families together. And who doesn't love peanut butter?

Ingredients

3 cups rolled oats 1 cup puffed brown rice 1 cup mixed nuts (almonds, cashews, walnuts), chopped 1/2 cup buckwheat 1/2 cup seeds (sunflower, sesame, pumpkin, flax) 1/2 cup desiccated coconut 1 tsp cinnamon 1 tsp ground ginger 1 tsp nutmeg 1/2 cup coconut oil 1/2 cup rice malt syrup 1/2 cup peanut butter 2/3 cup dried fruit (sultanas, apricots, cranberries)

Method

Preheat oven to 150°C. In a large bowl combine oats, puffed rice, nuts, buckwheat, seeds, coconut and spices. Mix well. In a saucepan over medium heat, melt coconut oil, syrup and peanut butter until smooth. Pour wet ingredients over dry mixture and stir until coated. Spread evenly on a baking tray and bake until lightly toasted. Stir occasionally as edges will brown faster than the middle. Remove from oven and sprinkle with dried fruit. Mixture will become crunchier as it cools.

Once cool, store in an airtight container and serve with milk, yoghurt and fruit. Especially passionfruit. And mango. Always mango.
