Apricot Bliss Balls

Remember those apricot bites and apricot logs we ate as kids? As delicious as they were, they were loaded with sugar. This version is full of dried fruit, which is technically still full of natural sugar, but they're healthy enough to allow you to be nostalgic without the associated guilt.
Ingredients 1 cup dried apricots 1 cup shredded coconut 1 cup raw cashews 1/3 cup coconut oil, melted 1/2 cup dried dates Desiccated coconut for rolling
Method
Place dates in a small bowl, cover with warm water and soak for 10 minutes. Meanwhile, combine apricots, coconut and cashews in a food processor or blender until breadcrumb consistency is formed. Drain dates and add to mixture in blender with coconut oil. Process until a dough forms. Roll into bite-size balls and roll in desiccated coconut. Refrigerate.
Makes 18.
