Flourless Chickpea Brownie

Ok...so it doesn't really taste like a brownie in the true sense of what a brownie is. But, for something made from chickpeas, this sweet treat is actually delicious. Packed full of protein and with the added benefit of being flour-free, you can enjoy a second slice of this dessert without worrying too much about the consequences.

Ingredients

1 1/2 cups cooked chickpeas (or 1 can, drained) 1 tsp baking powder 1/4 cup coconut oil, melted 2 eggs 1/4 cup peanut butter 1/3 cup raw cacao powder 1 tsp vanilla essence 2 tbsp rice malt syrup 10 dried dates 1/3 cup crushed peanuts, for sprinkling

Method

Preheat oven to 180°C and line a square baking dish with baking paper. Place dates in a small bowl, cover with warm water and soak for 10 minutes, then drain. Place all ingredients, except crushed peanuts, in a blender and blend until a smooth batter forms. Pour into prepared baking dish, sprinkle with crushed peanuts and bake for 15 minutes or until an inserted skewer comes out clean. Serve warm with a dollop of peanut butter and fresh strawberries. Store in the fridge for up to a week.
