Vegan Choc Caramel Slice

Are you looking for something sweet to convince your friends that vegan food can be absolutely delicious? This slice is it! The familiar flavour of golden syrup will have them convinced that vegan desserts are the way forward. And for those of us already convinced? Let's just put the kettle on and enjoy.
Ingredients
BASE
1/2 cup dried dates 1 cup raw almonds 1/2 cup raw cashews 1 tsp vanilla extract
CARAMEL LAYER
1/2 cup tahini 1/4 cup golden syrup 1/2 cup rice malt syrup 1 heaped tbsp peanut butter 1 tsp vanilla extract pinch of salt 4 tbsp cacao powder
Method
Soak dates in a bowl of warm water for 10 minutes. In Vitamix, or other high-powered blender, combine all base ingredients and blend until ground and sticky. Press into square baking dish lined with cling wrap and place in freezer. Add all caramel ingredients to the Vitamin and blend until combined and creamy. Pour on top of base and place back into freezer. Once set, cut with a hot knife and store in the fridge.
Tip: Serve immediately after removing from the fridge as it will melt quickly!
Serves 12.
