Chia, Quinoa Muesli Bars

These superfood muesli bars are far better for you, and far better tasting for that matter, that the sugar-laden supermarket brands we are accustomed to. Chia, quinoa, bananas, nuts....does it get any better? I'm no expert so I have no idea whether your body can absorb the goodness from uncooked quinoa so my next step will be to experiment with a cooked or soaked quinoa version of this recipe. For now though, these tasty bars will do the job regardless of the quinoa dilemma.
Ingredients
1 cup oats
1/2 cup uncooked quinoa
2 tbsp chia seeds
1/4 tsp salt
1 tsp cinnamon
2 ripe bananas, mashed
1/2 cup almonds, roughly chopped
1/3 cup dried fruit (I used sultanas)
1/4 cup peanut butter
2 tbsp maple syrup
Method
Preheat oven to 180°C and line a square baking dish with baking paper. In a large bowl combine dry ingredients. Mix through banana. In a saucepan over low heat, combine peanut butter and syrup. Stir until runny then quickly fold through bar mixture until combined. Pour into baking dish and press down firmly with wet hands. Bake for 25 minutes or until edges turn golden brown. Allow to cook completely before removing from tray and cutting into 10 bars. Store in an airtight container in the fridge.
Makes 10 bars.
