Pea & Feta Fritters

These fritters are what I cook on a Sunday afternoon when I have no idea what I'm having for lunches in the coming week. I'll cook a batch and eat them all week on their own, with salad or with whatever veggies were hiding in the crisper. So easy, so delicious. And they'll even transform into a dinner if you pair them with a big enough serve of greens. Another Coles recipe adaptation winner.
Ingredients
2 cups (240g) frozen peas 2 eggs 1 cup wholemeal self-raising flour 1/2 cup milk 100g feta, crumbled salt and pepper coconut oil for frying
Method
Cook peas in a saucepan of boiling water for 2 minutes or until tender. Refresh under cold running water. Drain well. Use a potato masher to crush until a coarse paste forms. Whisk the eggs in a bowl. Gradually add the flour and milk, stirring until combined. Add the peas and feta and stir to combine. Season with salt and pepper.
Coat a non-stick pan with coconut oil. Place over medium heat. Pour 4 x 1/4-cupfuls of batter into the pan and cook for 2-3 minutes or until golden underneath and bubbles appear on the surface. Flip and cook for a further 1-2 minutes or until cooked through. Transfer to a plate. Repeat in 2 more batches with remaining batter.
Makes 12 fritters.
