Sultana & Oat Slice
This Woolworths recipe was sent to me by my mum with a photo of her version and the comment "organic spelt slice...without the organic or spelt." For those of us with small pantries, being able to substitute ingredients according to what you have on hand, your budget or even personal preference makes so many recipes accessible to so many more people. So...here is is. The organic spelt slice...sort of. The listed ingredients are what I used and those in brackets are some substitutions that could be made according to what your pantry is currently stocking.
Ingredients
1/2 cup coconut oil
2 tbsp rice malt syrup (or honey)
1 cup oats
3/4 cup wholemeal flour (or spelt flour)
1/2 cup shredded coconut (or desiccated coconut)
1/2 cup sultanas (or other dried fruit)
1/2 cup coconut sugar (or raw sugar)
1/4 cup sunflower seeds (or pepitas)
2 tbsp cacao powder (or cocoa powder)
1 tsp cinnamon
1/2 tsp mixed spice
1/2 tsp bicarb soda
1 egg, lightly whisked
Method
Preheat oven to 180°C. Grease a 26 x 16cm tin with baking paper. Melt coconut oil and honey together in a small saucepan. Set aside to cool for 5 minutes. Meanwhile, combine oats, flour, coconut, sultanas, sugar, sunflower seeds, cacao and spices in a large bowl. Stir the bicarb into the oil mixture. Add to the dry ingredients with the egg and stir well to combine. Press mixture into tin. Bake for 25 minutes or until set. Cool before removing from tin and cutting into twelve pieces. Store in a airtight container.
Serves 12.
